{Wordless Wednesdays} A Pictorial of My Trip to Dubai & A Roasted Walnut Tabbouleh Recipe

Recipe for Tabbouleh with Roasted Walnuts
Inspired by Greg Malouf’s Artichoke to Za’atar
Ingredients:
½ cup of walnuts, roasted & finely chopped.
¼ cup bulgur, soaked & drained well.
2 bunches of flat-leaf parsley (leaves only), finely chopped.
½ bunch of mint, finely chopped.
1 large onion, finely chopped.
3 medium tomatoes, finely chopped.
juice of 2 lemons.
½ teaspoon salt.
½ teaspoon freshly ground pepper.
¼ cup extra virgin olive oil.
Method:
- Pre-Heat oven to 350 degrees.
- Spread the walnuts out on the baking sheet and put it in the oven for 8-10 minutes.
- Remove from oven and let the walnuts cool & finely chop the walnuts.
- Put the parsley, mint, onions, tomatoes, and walnuts in a large bowl.
- Add the soaked & drained bulgur wheat.
- Add lemon juice.
- Add salt & pepper
- Add olive oil & toss well.
- Serve with pita bread or pita chips.

I am so fascinated by Dubai, this place that was raised out of the dessert fairly recently, a fascinating mixture of ancient and thoroughly contemporary. Gorgeous photos! And wonderful taboule so different than the taboule I know.

Lovely pictures. Dubai definitely is a fantastic place to spend vacations. I was there in Feb-Mar this year and the weather was absolutely wonderful.
